devil's food cupcakes

To continue the mad sugar fest that was this weekend, I made cupcakes to take to a friend's house on Halloween. We decorated them, and it was the cutest thing ever.


These cupcakes are so good and so easy to make. They have a secret ingredient that makes them moist and delicious...



Mayonnaise! Surprised? Most people use sour cream in their baking, it makes everything moist. It's the same with mayonnaise.



And for my biggest announcement: I used a cake mix! I know. I prefer to bake from scratch, but this recipe is so good. I always use Duncan Hines cake mixes.

Put the devil's food cake mix in a big bowl. In a smaller bowl, beat together eggs and mayonnaise until creamy. Then pour it into the cake mix, along with water and vanilla. Mix it all up. Easy easy.



I like to use an ice cream scoop to put the batter into muffin tins. For me, it made about 20 cupcakes. It should probably make more for you. I always fill the muffin tins too high because I get excited.



Bake them at 350 degrees for about 20 minutes. I always bake everything I make about 5 or 10 minutes less than what the recipe calls for. I am adamant about making sure nothing is too dry, and all my baked goods stay moist and fresh. So these should only bake for 20 minutes or less.





The result: beautiful, chocolatey cupcakes. The mayonnaise doesn't add any strange flavor to it, just a nice creaminess. I hope you try these!

Devil's Food Cupcakes

3 large eggs
1 cup mayonnaise
1 box devil's food cake mix
1 cup water
2 teaspoons vanilla

Preheat oven to 350 degrees. Place papers in 24 muffin tin cups. In a mixing bowl, beat eggs. Beat in mayonnaise. Mix well with devil's food cake mix, water, and vanilla. Divide the batter among the cups. Bake for about 20 minutes, or until just set. Let cupcakes cool, and frost if you wish.

    For anyone else that has that question: the frosting is a simple cream cheese frosting. It's mostly cream cheese whipped up like crazy until it's light and fluffy. Then you add confectioner's sugar and a little vanilla. I used a small angled spatula to spread it on there and swirl it around.
