cookbook giveaway: cooking light dinner tonight

I am so overwhelmed by all the happy messages and well wishes I received after announcing our engagement. I love all of you who read my humble little blog, and I cherish the friendships I have made.



I wanted to think of some way to thank you, so I bought Cooking Light's Dinner Tonight Cookbook. I tested some of the recipes first: Barbecue Spice Rubbed Pork Chops and North Woods Bean and Spinach Soup.



After testing out these recipes, I have decided this book is totally worthy to give away to you guys. It is a winner. 350 delicious, easy, healthy recipes.



I am always looking for new inspiration on busy weeknights for a creative dinner. This book has helped spark some great ideas in my head.

    Congrats again on the engagement (i am slightly jealous! i want to get married hehe)
    My weekday go to meal depends if im on a diet or not! so it is either Salad with Quorn, chicken and avacado or if i am feeling super lazy warm bread and jam (NOM)
    The book looks delicious fingers crossed i win then maybe i can make my new man a future fiance! haha

My "go to" meal is anything I can put in the crockpot. It makes the whole evening better when dinner is already done. Post all about your wedding plans. We love you.

    My go-to is usually an omelette or a grilled pb&j. Or I just skip dinner and go to dessert...that always works :)

Pre-marriage, my favorite go-to weeknight meal was salad - most of the time I just feeding myself so I didn't even bother chopping a lot of the food that went in and there was no cooking involved. I still miss those days. Now the go-to meal is quesadillas, since my husband shuns lettuce and all things vegetable.

    My busy night meal is noodles with some ground beef tomato sauce along with scrabbled eggs with greens!

  9. Being from the Midwest, I'm a huge lover of hotdish, so pretty much any kind of hotdish is my go-to food for a busy night. My favorite though is spaghetti hotdish. It's just as it sounds... a jar of spaghetti sauce (doctored up a bit with balsamic vinegar, brown sugar and extra spices), ground beef or turkey browned with an onion and garlic, pasta (whatever I have on hand)and a can of tomatoes. Sometimes I'll even use chili ready tomatoes to give it some kick...this happened one time on accident and I was pleasantly surprised! Mix it all together, sprinkle some cheese on top and bake for about half an hour...or until my husband gets home :) Pair it with a piece of bread with peanut butter and honey on it and it's comfort food at it's best!

  10. Definitely some sort of stir-fry! My husband is chinese food crazy so I try to have that on hand so he will be less tempted to order take out. Plus, my version is much healthier!

    Congrats on your engagement!!! I am so excited for you! It is such a fun time and it goes by all too quickly. We just celebrated our first 6 months of marriage and I feel like it was yesterday when we got engaged. So FUN!

  11. my go to busy weekday meal is most definitely cereal, and not just any cereal, the sweet ones. mmm like honey bunches of oats or *guilty here* chocolate flintstone pebbles. anything chocolate will do it for me as well :) thank you for the giveaway jenna! you're so sweet <3 no wonder michael picked you! :P :) ~ellen

  12. congrats on the engagement! i found your blog through the food buzz top 9, and i love all of the recipes you share. since i am a broke recent college grad, my go-to busy weeknight dinner is eggs and toast. i spruce up the eggs with onion, garlic, tomato, maybe basil or mint, and cheese.

  14. as a busy college student the easiest meals are pasta or veggies and chicken. i don't think i've eaten so much chicken and veggies in my life!

  15. Ohh you are the best Jenna! My favorite weeknight go-to meal...hmmm have to go with pasta here. Mix in some roasted veggies and a nice olive oil/parmesan sauce and you're good to go!
