fruit and spinach smoothie

I know what you're thinking. Fruit and spinach smoothie? Really?

You will be so surprised! This power drink is full of vitamins and nutrients. The benefits of spinach are out of control. It is nutrient-rich, heart-healthy and an excellent source of iron. I hear that iron is good for pregnant woman and growing babies. I should feed this smoothie to my preggo sister.

Let's be honest. I don't really like raw spinach. When I make spinach, I usually saute it in a balsamic vinegar, sugar and pancetta mixture. It covers up the taste. It becomes very un-spinach like.

In this case, I am covering up the taste of raw spinach with delicious, sweet fruit.

Everything on the above cutting board goes into a blender with one cup of vanilla soy milk. That's it! No sugar, no ice... this smoothie is so legit.

You are going to love it. I don't appreciate overly-sweet, borderline milkshake-like smoothies. This one is the perfect balance.

Great for a super healthy breakfast, which is how I have been enjoying it.

Fruit and Spinach Smoothie

1 cup vanilla soy milk
1 whole ripe banana
4 frozen strawberries
4 slices frozen peaches
1 tablespoon milled flax seed
1 handful (about 3/4 cup) raw spinach leaves

Put everything in a blender. Blend it. Pour it into a glass. Sip and enjoy. Easiest recipe ever.
